Robert Gillespie


Serio’s Executive Chef Robert Gillespie is a native of Carrollton, MS and a graduate of Pillow Academy in Greenwood.  After graduating from Scottsdale Culinary Institute in Arizona, he did his internship at the James Beard award-winning Highlands Grill in Birmingham, AL.  Chef Robert further honed his culinary skills at Madidi, renowned actor Morgan Freeman’s restaurant in Clarksdale, MS, as well as Giardina’s at The Alluvian Hotel and Delta Bistro in Greenwood.  

Chef Robert’s culinary explorations of the vast New Orleans restaurant scene and its complex food culture solidified his decision to become a chef, and Creole and New Orleans flavors and ingredients have strongly influenced his cuisine throughout his career.  While New Orleans is more commonly associated with French-influenced food, Italians made a major impact on New Orleans cuisine, which Chef Robert has enjoyed rediscovering as Executive Chef of Serio’s Italian Steakhouse.  His authentic Italian dishes, combined with creative chef’s specials and expertly prepared steaks and seafood, allow Chef Robert to share his unique variety of Delta cuisine with Serio’s fine dining customers.

 Aside from his passion for being a professional chef, Chef Robert enjoys spending time with his family, gardening, hunting and fishing, especially trout fishing, primitive camping and campfire cuisine.
